INGREDIENTS
1 cucumber, peeled, seeded and grated
1 teaspoon salt
1 cup plain non-fat yogurt (Greek style is best)
2 cloves garlic, finely chopped
1 tablespoon extra virgin olive oil
1 tablespoon lemon juice
1 teaspoon lemon zest
1 teaspoon chopped mint and/or basil (optional)
