A group of creative educators in Boulder Valley School District developed a fun way to keep colorful fruits and veggies in every student’s food forecast: Rainbow Days!
During 2010, after receiving salad bars funded by the Let’s Move Salad Bars to Schools program, the district hosted Rainbows Days at 31 schools in just one semester—and they’ve hosted many more since. Students are challenged with the task of creating a “rainbow” of fruits and vegetables on their trays. When they finish eating, they receive a reward.
